Chickpea Bowl

What You’ll Need

  • 1/3 cup cooked quinoa
  • 1/3 cup roasted chickpeas
  • 1/2 cucumber
  • 1/2 cup lettice
  • 3 cherry tomatoes
  • 5 green olives

What To Do

  • Roast chickpeas with your seasonings of choice (mine are s/p, cumin, turmeric, garlic powder)
  • Cook quinoa with some veggie broth or bouillon
  • Mix and enjoy!
  • Recommended dressing: olive oil, balsamic vinegar, mustard, salt/pepper!
