What You’ll Need
- 1/3 cup cooked quinoa
- 1/3 cup roasted chickpeas
- 1/2 cucumber
- 1/2 cup lettice
- 3 cherry tomatoes
- 5 green olives
What To Do
- Roast chickpeas with your seasonings of choice (mine are s/p, cumin, turmeric, garlic powder)
- Cook quinoa with some veggie broth or bouillon
- Mix and enjoy!
- Recommended dressing: olive oil, balsamic vinegar, mustard, salt/pepper!
