
What You’ll Need:
- 2 cups cherry tomatoes
- 1 handful of basil leaves
- 2 cups of rotini pasta
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tbsp vegan mayo (I use Hellman’s)
What To Do:
- Cook pasta according to instructions
- Chop cherry tomatoes into quarters, and chop the basil leaves finely
- Once the pasta is cooked, drain it and add it to a bowl with a drizzle of olive oil
- Once the pasta cools, add the tomato, basil, olive oil, vinegar, salt, pepper, and mayo
- Mix and let cool in the fridge until you’re ready to eat!
