Pasta Salad

What You’ll Need:

  • 2 cups cherry tomatoes
  • 1 handful of basil leaves
  • 2 cups of rotini pasta
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp vegan mayo (I use Hellman’s)

What To Do:

  • Cook pasta according to instructions
  • Chop cherry tomatoes into quarters, and chop the basil leaves finely
  • Once the pasta is cooked, drain it and add it to a bowl with a drizzle of olive oil
  • Once the pasta cools, add the tomato, basil, olive oil, vinegar, salt, pepper, and mayo
  • Mix and let cool in the fridge until you’re ready to eat!
