Salads can be extremely boring if you don’t switch it up sometimes, so I try to create combos that are new and still tasty/filling. This easy vegan tahini salad contains plant-based protein, a healthy starch, healthy fat, and plenty of greens to keep you satisfied all day long.
Here’s what you need:
- 1 large bowl spring mix
- 1/4 cup cooked quinoa
- 1/4 cup canned or cooked corn
- 1/2 avocado
- 2-3 tbsp tahini salad dressing ( I like SimplyNature Tahini Goddess Dressing )
Mix well & enjoy cold!
