Healthy Banana Pancakes

Brunch in bed, anyone??

I’m a big fan of lazy Saturdays and Sundays, but I learned a while ago that you don’t have to feel gross all day if you decide to brunch it out. If you’re in the mood for something brunch-y and still healthy, try this one out.

Now it’s pancake time.

Here’s what you need:

  • 1 ripe banana
  • 1 tbsp peanut butter
  • 1/2 cup oats
  • 1/2 cup almond milk
  • 1 tsp cinnamon
  • 2 tbsp ground flax seeds
  • 1 tbsp vegan butter
  • optional toppings: strawberries, cacao nibs, agave nectar

Here’s what to do:

Combine the banana, oats, almond milk, cinnamon, flax seeds, and peanut butter in a blender until the consistency looks similar to regular pancake batter (thick and smooth). On a medium heat pan, add the vegan butter and your first pancake mix. Cook like regular pancakes and flip when you see bubbles, however these may take longer than traditional pancakes so be patient. When you’re done with all the batter, top with agave nectar, strawberries, and cacao nibs for extra sweetness.  Enjoy!
