Easy Vegan Pasta Dinner

I know you guys love pasta as much as I do… so how about an easy vegan pasta dinner?

Here’s an easy way to enjoy pasta with plenty of veggies and flavor… no need to worry about portions since it’s veggie-heavy and filling.

Here’s what you need:

  • 2 oz angel hair
  • 2 tomatoes, chopped into small pieces
  • 1 tbsp olive oil
  • 2 tbsp GoVeggie vegan parmesan
  • 1 tbsp chopped basil
  • salt, pepper to taste
  • 1 clove garlic, chopped

Here’s what to do:

Bring a pot of salted water to a boil. While you wait, heat up garlic and olive oil in a medium heat pan for about 30 seconds. Add chopped tomatoes and a pinch of salt and pepper. When the tomatoes are fully heated and mixed with the olive oil, reduce the heat to a simmer. mix occasionally, and let cook until your pasta is done. Add the pasta to the water when it boils and cook according to instructions. When the pasta is almost done, add basil and another pinch of salt and pepper to the tomatoes. Add the cooked pasta to the tomatoes and let cook for a minute or so. Remove from the heat and add to your plate with the vegan parmesan on top. Serve hot and enjoy!
