Healthy = not giving up pasta if you LOVE pasta.
Carbs aren’t the enemy and you should never feel guilty for eating something you love! The key is always to incorporate foods into a balanced meal and learn how to add as many veggies as you can to make it taste incredible (and make YOU feel good).
One of my new favorite ways to incorporate pasta these days is with a homemade garlic tomato sauce and roasted veggies.
Here’s what you need:
- 2 oz veggie infused pasta (the kind that includes a serving of veggies: I use this brand)
- about 1 cup broccoli
- about 1 1/2 cups chopped grape tomatoes
- Optional: 5 Trader Joe’s vegan meatballs
- 2 tbsp olive oil
- 1 tbsp chopped garlic
- 1 tsp garlic powder
- 1 tbsp chopped basil
- salt, pepper to taste
Here’s what to do:
Preheat your oven to 375 F and get a pot of salted water boiling for your pasta. Chop broccoli into bite-sized pieces and evenly coat them on a baking pan with 1 tbsp olive oil, salt/pepper, and garlic powder to your taste. If you’re also cooking the vegan meatballs, you can add those to your pan. When your oven is ready, roast these for 20 minutes.
While those cook, add your pasta to the boiling water and cook according to the instructions. In a small pan, add 1 tbsp olive oil and your chopped garlic and begin to cook on medium until you hear it sizzle. Add your tomatoes and cook on medium, mashing them every few minutes to squeeze the juices out. You can cook these on medium-low for about 7 minutes and add salt, pepper, and basil to your liking. When your pasta is ready, add it to these tomatoes and mix for a minute or so on low heat.
If you time it right, your pasta, tomatoes, broccoli, and meatballs will be ready at about the same time. Serve hot and enjoy this easy & healthy pasta meal.
