Roasted yellow squash is one of my favorite things to add to a meal because it’s SO sweet and tastes amazing when you get it to a perfect golden-brown color.
When it comes to healthy weight, obviously we think about eating clean. BUT… it doesn’t have to taste bad. When you cook things right AND make it a balanced plate, you’ll be satisfied with how you feel after and how great it tastes. This meal is a perfect example of the balanced plate concept I explained in the VIP package I released this month. Eating the right combination of foods is essential to making the most of the energy your body needs.
SO.. Here’s what you need:
- ½ yellow squash
- 1 cup spinach
- ½ cup cooked quinoa or grain blend
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp vinegar
- 1 tsp lemon juice
- 1 tsp salt, 1 tsp pepper, 1 tsp garlic powder
What to do:
Preheat your oven to 400 degrees F. Slice the yellow squash into circles about ½ inch thick. Mix them in 1 tbsp olive oil (save the other tbsp for the dressing), salt, pepper, and garlic powder. Arrange the yellow squash evenly on your baking pan and cook for 25 minutes, or until they turn light golden brown. Meanwhile, cut your spinach into very small slivers (I like doing it this way so that it tastes less spinach-y when you mix it all up). For the dressing, mix your mustard, olive oil, vinegar, and lemon juice. Right before you remove the squash from the oven, heat up your cooked quinoa and mix it with the spinach. This makes a simple warm quinoa salad. Place the cooked squash on the plate next to the quinoa salad and drizzle your dressing on top!
