I always get messages when I post pico de gallo on my stories, and I figured I’d make a recipe post because it’s actually SO easy and extremely healthy for you.
My mom is from Mexico and she’s always loved making us fresh meals she loved growing up. If you like Mexican food, this is a GREAT recipe for you to know because not only is it healthy, but you can add it to most classic Mexican meals: chips, tacos, rice & beans, enchiladas, chili… basically anything.
This is ALSO a healthy substitute for toppings like cheese, sour cream, etc.
When you’re eating healthy, swapping some ingredients out can make a big difference, and this is one of the best ideas for a healthy swap with some Mexican meals or snacks.
Here’s what you need:
- 2 avocados
- 2 tomatoes
- 1 onion
- 1 cup cilantro
- Juice of 1 lime or lemon
- salt, pepper
You can use as many avocados/tomatoes as you need depending on how many people you’re feeding, but the key is to use equal parts tomato and avocado.
SO. Chop the tomato and avocado into equal sized pieces. I like them in about 1 inch cubes, but really do it how you’ll enjoy it. Chop the onion and cilantro into small pieces. Mix all the ingredients and add lime juice, salt/pepper, and let it sit for a few minutes. You’ll want to eat this within a day of making it so the avocado doesn’t go bad.
